How I evaluate a position:
- look at the position with a blank stare
- realize that I’m not recognizing any patterns
- feel bad about myself
- click on stockfish to help me
- scream in horror when stockfish shows a simple fork in two
- repeat from step 1 for a new position

How to evaluate any position. Are my pieces better than my opponents pieces? If so then good otherwise bad. :)

Well, my strategy is a bit different, it’s:
1- try to remember what Ginger GM says on youtube or Dey Vey Dey to play in this position
2- realize that I don’t remember
3- Try to figure it out on my own using Silman’s Reassess your chess lessons (who has better minor piece etc.)
4- realize that I don’t know
5- Realize that contrary to Kotov’s Advice I came back 17 times to one candidate move after not liking other candidate moves even more
6- make a move
7- opponent replies by taking a free piece I hung or by a queen fork
8- proceed to try and flag my opponent
9- receive nasty comments on my profile page from opponents I flagged with a king and pawn while they had all their pieces still and had mate in 1 pre-moved when their clock ran out and I won
10- delete the nasty comments, repeat from step one in a new game.
Seems like you don't take your candidate moves serious if your opponents take a hung piece next move. You need to seriously analysis the move and check the possible replies to it. If you can't see a possible fork reply to a move, you need more tactic practice.
My thinking process is completely random. I talked to many really strong players and -believe it or not- it is random as well. :)

I think it would be more accurate to say you're thought process is guided by your intuition. A cognitive scientist would say your brain has automatized your thinking process much like when you go for a walk you don't actually think about each step you make.
