Why don't people play series anymore?

I find maybe 1/20 players will play multiple games. Why doesn't anyone take rematches and play "best of" series?

Try bullet! Rematches are nearly a given, particularly at higher levels.

Maybe to play against different openings, but I don't think this is usually an issue

Even in bullet you only have that with people you kind of know (in a chess way) nowadays. Lower-ranked players will sometimes play until they beat you :D
