The puzzle could have be better.

For the first time there is a puzzle for my games even though I was excited to see that I understood that the puzzle could have been better i.e. it was a mate in 3 but the puzzle made it mate in 1. why is that so? here's the link to the puzzle: lichess.org/training/iAgbh

Probably because of the line 20...Qa1+21.Kc2Qxa2+22.Kc1Ba3#.
This means there are two good responses after pawn-takes-knight. Lichess puzzles allow for different last moves if they all lead to checkmate, but in this move Qa1+ is 'clearly' wrong (one extra move to checkmate) but still a good move, so Lichess decides to avoid the controversy and simply not turn it into a move that is part of the puzzle, hence the genius move before it also cannot be part of the puzzle.

Because Lichess only features puzzles where each move is an only move, while in your game after ...Nd3+ cxd3 there are two possible winning continuations.
Every single puzzle is about to find the best move - not secondary best move. Most of them are created to have one 'good to eye' option, not many.
