No mating material shouldn't win

The argument at the moment is that only in edge cases will a single knight or bishop be winning material. As such, with lichess as arbiter, the position is called draw. Let me re-iterate: lichess is making this decision `as arbiter.` This is not being determined by FIDE's rules of chess.

It's simply a question of, will a single knight/bishop (against any number or formation of opposition) have greater odds of winning or losing/drawing?

We determine that the odds are more than significantly against winning.
I would like to point out that it shouldn't be up to the arbiter after the flag has fallen, but if/when a player makes a claim before the game has finished. Though, if lichess wants it like that, then I guess that doesn't matter.
If that would be the case I would claim a draw in the game (if necessary wait until the time runs out). In this case it is a draw even in a "mate in x" position. This way it doesn't matter how lichess is handling this problem it remains the same solution. Why should they use their time for this? There are other things they are working on which are much more interesting for the improvement of lichess.
I am sorry, but I am not demanding the implementation change, I am discussing whether the current implementation is correct. There isn't even any implication that if the conclusion of the discussion leads to a change being desired, that the change should have a high priority, so it wouldn't necessarily take away from "more interesting" stuff. Also, it is subjective how interesting some improvement/change is, it is not up to you (or me) what should have higher/lower priority.

Discussion isn't that bad a thing.

P.S. One more thing, how do you know that I am not willing to contribute the time to implement the change if it were agreed that it should be changed?
