What's the worst thing that can happen to you???

I'm not a perfect girl! I always get into troubles, but I have lots of friends. However, the worst thing that can happened to me is being separated from my friends or loved ones. I'm scared to be alone!

That's pretty much how eels and some squid are prepared. I once asked a chef how they tenderized their squid and he refused to tell me.

(They put a bunch of them in a large bucket with salt. The salt tears their skin, so they keep squirming in pain, and by squirming they tear open the skins of the other eels, who then also keep squirming. After a couple of hours of exhaustion, their muscles are full of lactic acid, which tenderizes the meat. You can tenderize eels without torture by marinating them in acid post-mortem, but it's more work and the cuts look less clean.)

The method is described here in Dutch:

Maybe the tenderizing and lactic acid idea was wrong, because I couldn't find anything on that, and in this piece they call it "desliming".

> machine translated a piece:
> Doctor Schoemacher, famed cosmetic doctor, compares eel suffering to putting cigarette butts on your skin. Doctor Schoemacher made this statement after seeing the results of a veterinary study commissioned by Wakker Dier. The standard preparation process of the "delicacy" smoked eel involves throwing eels alive and well in salt to de-smear. The research shows that not only the slime layer, but also the entire epidermis is removed during the process. Schoemacher says, "Removal of the epidermis is done by CO2 laser treatment. In our clinic, this is always done under anesthesia because it is very painful; it feels like burning cigarette butts being expressed on your skin." The eels become unconscious in the salt bath after 5 to 20 minutes, but are not dead by then. As early as 2001, the government decided to ban the salt bath after parliamentary questions. When the cabinet fell, however, those plans ended up in the wastebasket.
