Same opening starter... again and again and again.

I always get people who play the 'Universal' opening which is d6 or e6 by black. Or if I play as black, they always play d3 or e3. Any way to counter this and hopefully stop having to deal with the same move over and over in every single game I play?

You simply push both your centre pawns and develop. You have more space so quickly activate your pieces.

That is true, however they always end up in a position where my pawns are on e4 and d5, while my opponent's pieces are on e5 and d6. Or the mirrored way around.
you can abort the game when your opponent plays e3 or d3

Get better. They give you the center and you need to learn how to punish. We can offer an opening, but you will only memorize the moves.

If you study the chess principles and get good at them, it will eventually come naturally a path to punish that.
It will give you some experience against those openings.

Aborting games is a sign of disrespect, and it's frowned upon at all levels. On Lichess it's not allowed, and you can get play banned for it.
We can abort a few games ( I didn't tell we should abort all games)
