I'm not really sure you were really easily winning anywhere. Granted, the computer rates you 2.5 pawns ahead after move 25, but that move 26. Rxf5 isn't that easy to spot or evaluate as better than 26. fxe4, which you played. After that, you were only 1 pawn up, which is often not a win in a rook endgame.
I'm not sure why, but in endgames, the evaluations seem to go all over the place - a "correct" move (not an inaccuracy/mistake/blunder) can shift the advantage by 1 pawn - so I think this game was actually quite even
