Because you passed up the chance to win an entire rook and instead won the exchange.
If after 16 Bxe8 if there follows 16...Rxe8, recapturing, this fails to Qxe7; the rook can't take the Queen due to Rd8+ with mate to follow.
So black can't take the bishop after he takes the rook; but after Rd1, which you played, the rook no longer points at Black's weak back rank, and he's free to recapture.
I could be missing something, but I don't think so. Feel free to check with Stockfish.
