I'm thinking of creating a team on Lichess where the members try to create matches during a given week for fun for longer time controls, at least 30+30. I definitely need to practice at a slow time control for OTB matches. So basically if someone's free on a certain day you would just post about your availability and then someone else will be able to shoot you a message to play. If you're interested in this kind of thing (since it's hard to get a long game going from the lobby) message me. These would be unrated matches
I think you complicate things unnecessarily. Just create a challenge and wait for people to join. I do not have problems playing 30+10. Though I always play rated, and I think with such a long time control playing rated would actually motivate your opponents not to blitz out the moves.
Yes, I think if you just keep trying the lobby you'll do fine. I play slow. I played 28+15 for a long time. Now I'm trying 20+30, and I've never had a major problem getting games. So maybe you have to wait a minute or two longer, that's not a big deal.

I regularly play long games on Lichess. 30+30 is the sort of thing I'd be up for. I'm on usually once or twice a week.
I am in the lone wolf league, should have mentioned, so now talking to a mod who is part of their ladder league that I haven't joined yet. Lone wolf is fine but it's only once a week
