I played a 1-1-1 game

Without going deep into opening or strategy, since you are an inexperienced player (no offense here) and the opponent was apparently a GM, I would suggest that on a strategy side you try to castle your king sooner, and as a tactic motif you keep in mind the Rxa3-Qa5+Qxb5 - combination (two pieces are generally better than a rook)
It is suicidal to play mainstream openings against a professional player. They know too much about it.
I do not like your 10 Nxe7. Your Knight stand very well on d5. Better give up the Bishop Bxf6, as his Bishop is bad.
13 cxd5 weakens even more your grip op square d5. You trade a centre pawn for a wing pawn. Ok you win a pawn, and I understand you did not see 14...Rxa3 coming, but your King is in jeopardy.
The problem is, if you play to get a GM out of book, you will be most likely just playing a bad move, so not of much help either. So, I advise just to stick to your main lines, especially that your average opponent is about your level. That said, I do not recommend playing open Sicilians (3.d4) with white, as they require some precise calculation, but also knowing a lot by heart. I would suggest 2.c3 instead.
I have played several grandmasters, each time taking them out of their opening book as soon as possible and got decent positions, that I lost in the middle game or in the endgame.
Some amateur defeated Magnus Carlssen with 1 e4 e5 2 Nf3 Nc6 3 Bb5 Nge7. 3...Nge7 is an inferior move, but not really bad and takes the champion out of his book.
Yes 2 c3, 2 c4, 2 Nc3, 2 f4, 2 b4, 2 d4, 2 b3, 2 d3, 2 g3 are all playable and avoid the mainstream memorized lines.
