Why do I cancel the game?
I do not want to play with users whose rating is not defined. Those users near that rating is a question mark (example: 1500?).
But the question mark is not displayed next to the player's rating in the section GAME -> LOBBY.
And yet, when you create your game, there is no such setting, "I do not want to play with the players which is not defined rating."

And every time it turns out that I know that the player's rating is not defined only when the game started. What do I do if I do not want to play with such a player? Just cancel the game.

A sidenote about point PS 1. Glicko2 uses deviation, ratings with a question mark means that the deviation is above something like 100-110, usually above 300 for new players I think. Therefore it will not affect your rating as much as an established 1500 player.

If you loose against a low rated player, then your own deviation will also rise. Which makes it easier for you to gain the points* back if you win against someone with higher rating.

I think we all have an obligation to be welcoming to new players. That should mean being respectful when chatting and not aborting simply because the person has a provisional rating.
There are players who play not only games rating and the rating is unknown. When I'm not playing the rating game, I want to know what the power of my opponent's game.
From a practical point of view, if you play in tournaments you will be less likely to encounter new players than if you play in the lobby.
I sometimes do not play rated games to try new chess openings and new ideas. And I need to know what the rating my enemy.
